"Chirashi" Sushi (Scattered Sushi) Recipe

Hello everyone! I hope you've all been well :)

This is a post I've had ready for a little while, but with all the beauty posts I've been doing and being part of the Rimmel Beauty Insider Competition, this recipe post has been sitting on the back burner (Yes. Cooking puns. Get ready).


But it's been waiting in drafts for too long so I thought I'd whip it out and maybe give you some food-spiration for your weekend dinner! I'll warn you, this one is utterly delicious, and these photos are not for the empty-stomached... (puns. I wasn't kidding).


Kind of like fried rice, and kind of like an open sushi roll, 
ちらし寿司 or "Chirashizushi" - also known as "scattered sushi" - is a Japanese dish that I had the pleasure of trying not long ago and one that I will share with you all!

One of my mum's friends from Japan stayed with us a few weeks ago and knowing how much I love Japanese food (a LOT), she taught me how to recreate this とてもおいしい (very yummy!) Japanese party dish 

It's a little bit different from the traditional recipe as some ingredients were hard to find, but it was still super yummy! This recipe is the "Easy-For-Aussies" version haha It's not super detailed, so maybe get your mum (or other wonderful cook) to help you like I did :) 

Ingredients:
  • 2 1/4 cups Japanese rice
  • 3 eggs and 1/2 Tbsp sugar
  • Sushi vinegar (1/4 cup rice vinegar, 2 Tbsp sugar, 1 tsp salt)
  • Handful snow peas
  • Smoked salmon slices
  • Half a dozen frozen prawns
  • 1 packet Mizkan Chirashi sauce and garnish kit
Method:


1. Rinse rice in cold water either using a colander or by swirling the rice in water in a bowl then draining the water. Repeat until the water runs clear.

2. Place rice in a rice cooker and add 2 1/3/ cup of water and turn the cooker on.

SO. MUCH. RICE.
We bought this from Costco, where everything is gigantic-sized!

3. Boil snow peas until cooked and soft. Slice into thin strips.


4. Boil prawns in a small saucepan until they are fully cooked and turn white (see second photo). Chop into small rough bite-sized pieces.


Yummmm I love prawns 
You want them to be little chunks.
5. Beat eggs in a bowl and add 1/2 Tbsp of sugar. Add some oil to a small frying pan or skillet and add a ladleful of the egg mixture and swirl until it just covers the cooking surface. Make a few thin crepe-like omelettes. Slice into thin pieces similar in size to the snow peas.

My mum's friend made these ones, I wish I could make them so perfect!!
6. Make sushi vinegar by mixing rice vinegar, sugar, and salt in a sauce pan. On low heat, wait until the sugar dissolves then cool the mixture (I had to Google this bit - I was sure something happened to the cooked rice but I had no photo to help me haha So I trust Taste.com when it say you add sushi vinegar here haha).

When the sushi rice is ready, spoon into a large serving bowl or plate and fold the sushi vinegar into the rice using a spatula.

7. Using the Chirashi kit, empty the contents of each sachet into the rice and fold through. This stuff is so yummy!!

This one is like a pickled carrot and onion garnish/sauce. It add tang :)
8. Slice the smoked salmon into small thick strips. Then spread over the rice with the snow peas, omelet strips, and prawn pieces.

And there you have it!

  1. Oh yes chirashi! I've seen a recipe video for it before and was kinda left mesmirized at how quirky it looked! Haha I love how you've readapted it for Aussies! I've always figured everything at Costco was perfect to restock a secret base or something, that bag of rice is so chubby hehe! Don't we all love prawns? c: I love how succulent and plump they still are once you've chopped them up! The egg-crepes look so even and perfect! Hahaha Taste.com is such a great backup isn't it? But it does sound very right! Aww, yeah, recipes needs to be that kawaii to entice everyone :3 I've never seen a pickled carrot garnish! That sounds wicked. Wow, that looks so moreish but light as well! What an achievement :D I'm honestly salivating HAHA I think my favourite Japanese dish would have to be.... udon? I only had it for the first time not so long ago and wondered what I had been doing with my life before it.

It's so yummy, it really does taste like sushi but you eat it like you would fried rice haha I love Taste.com, I've used so many recipes off them and they've all be great successes :) Yum, I love udon! I had a teriyaki udon once and it was so delicious, I ate the entire bowl (not the actual bowl hahahaha) xx
